Today we started right from here: two clementines, one from Policoro in Basilicata, and one from Calabria. Two products that at first glance may seem the same, but when tasted, tell different stories. There’s one characteristic we always look for in clementines: besides sweetness, that particular hint in the aftertaste that slightly reminds you of salt. Our goal is to choose today a product that can show its best in the middle of next week. That means carefully evaluating ripeness, texture, shelf life, and the characteristics of each individual product.
