A curious name for a vegetable that is still little known, born from the cross between zucchini and cucumber.
It struck us not so much for its origin, but for its versatility: it can be eaten raw or cooked, it can be used entirely, from the skin to the pulp, and it is also very practical thanks to its long shelf life outside the fridge.
In our work, every day we select products on the fruit and vegetable markets of Northern Italy, but we are not only looking for what is best known or requested. We look for what has value, even when it's less obvious.
Because making a selection also means discovering new things, observing the market and choosing what can bring something different.
